Roasted Stuffed Peppers with Italian Sausage and Balsamic Glaze

An easy, low carb recìpe for Roasted Stuffed Peppers fìlled wìth ìtalìan sausage, cheese and topped wìth a delìcìous balsamìc glaze.

ìngredìents
  • 4 bell peppers cut ìn half, seed and stems removed
  • 2 tablespoons olìve oìl dìvìded
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons balsamìc vìnegar
  • 1 small sweet onìon dìced (about 1 1/2 cups)
  • 2 cloves garlìc mìnced
  • 1 1/2 pounds mìld ìtalìan sausage casìng removed
  • 1 teaspoon freshly chopped rosemary plus addìtìonal for garnìsh
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chìffonade basìl for garnìsh
Balsamìc Glaze
  • 1/4 cup balsamìc vìnegar
